Nioh is great but way tougher to get into, it has many more systems that you must understand before getting into the fights later in the game. The stance-based combat is also a plus that adds an indirect layer of difficulty to the game imo.
Remnant: From the Ashes: It's not really a souls-like, it's more like a co-op shooter with souls-like elements, but the game is great and many consider it a proper souls.
I still consider the first Dark Souls to be the best of them all as I didn't play any others that would make me feel similar to the original DS franchise and other FromSoftware games. That sense of awe paired with the "knights and castles" era combined with that mysterious atmosphere and "aura" was unmatched for me.
