I like most vegetables, especially stir-fried, with water chestnut, bamboo shoots, and carrots being my favourites. The only veg I'm not big on is raw carrots, and for some reason cooked carrots if they're not cut length-wise. Anyone that hasn't tried water chestnut or bamboo shoots should have them fresh or at least frozen. Their flavour gets destroyed when canned.

Technically fruits, but I'm also big on avocado and eggplant, but I can't eat them often. A crispy, skin-side eggplant parmigiana is incredible.

1. Try boiling your vegetables briefly first and then pan-frying them. This way they are soft inside and firmer on the outside, kind of like they have them at hibachi places.

its been the only big realization though - I haven't had any salads that appealed to me, but I really want to find some :( I definitely like more savory flavors than sweet ones, so those honey vinegarette style dressings really don't do it for me >_<

Try a salad with crunchy noodles and soy sauce. You're better off finding a recipe, but what I do is make a salad with lettuce, cucumber, avocado, and whatever else I have on hand. Then I fill a small cup with crunchy noodles, add a bit of soy sauce, and swish it around so they're evenly coated in soy sauce, and empty the cup on top. But if you do it that way you have to eat it quick, otherwise the noodles will get soggy.

Ritalin used to really restrict my diet but now that I'm off it, I'm getting way more veggies. Anyone who struggles keeping them down should try this:

Steam them (try spinach or long stem broccoli).

Get them nice and dry, helps with palatability.

Season with lots of pepper and garlic

Serve alongside carb of choice and maybe try some butter also.

I'm enjoying lots of peppers, onions and carrots also.

Also try romaine lettuce in your lunch (iceberg is empty junk food)

I love vegetables. Once I really got into cooking I realized how much more versatile they are than meat or carbs most of the time. Flavour-wise they can add sweetness, savoriness, spiciness, basically anything. And they can add so many different textures too. They can work great on their own, but they can also be used to enhance something else like a meat or carb so easily.

One of my favorite vegetables is a turnip. If you haven't had one, it's like a cross between a potato, a carrot, and a radish. It's really good cooked basically any way you'd cook a potato or carrot: mashed, roasted, fried, boiled in a soup or stew, or whatever. And personally I think the taste is better than either a potato or a carrot.

There aren't really any vegetables that I dislike entirely. I used to not be big on bell peppers, but I've been coming around on them. I will say that most of the time when corn is used as a smaller element in a dish and not as the main part I find it overpowering and the whole dish just kind of tastes like corn to me. Not the worst thing in the world, but I would generally prefer corn not be there.

i've always loved veg. when i was a kid i used to go to my grandma's house and when she asked if i wanted candy from her candy drawer i'd ask for broccoli instead LOL.

i love steamed veg like broccoli, brussel sprouts, and cauliflower. potatoes are probably my fav veg nowadays bc theyre so versatile. i love em fried, baked, boiled, mashed, etc... i also really love tempura veg, it's genuinely so delicious. plus onions, i eat onions raw shrek-style when given the chance.

I've always preferred veggies over meat  :seal: ( I'm not vegan tho ). My faves are peppers ( even fresh, super crunchy and sweet), cabbages, cucubers and white turnips  :wink:  :loved: . My parents says that I used to hate potatoes XD, I don't remember that hahahah ( potatoes are the goat, if you're lazy just pop some of them in the oven and you're good, plus some oil, pepper and rosemary or thyme :dive: )

I think veggies saves the day, a lot of them can be stir fried and used as topping for pasta, then you're good ( yup I'm lazy haha )

I'd say I like most veggies, even raw/just steamed/cooked/whatev. There's very few veggies that I'd pass on taste only. Maybe celery and asparagus. But I still do eat asparagus so...lol.

However, after years of stress/issues etc my gut is completely messed up, so I cant really eat veggies anymore. I can eat cucumbers, but I never buy it cause it's too expensive compared to the nutritional value lol. I'm not paying over 3 bucks for a single cucumber, ie chomping at solid water.

Potatoes, broccoli heads, small amount of thoroughly cooked carrot/yellow bell pepper and the occasional tomato is something I can handle. Tomato skin flares my rosacea, lol, and almost all veggies in general now give me stomach pains. Feels like I've swallowed glass shards and then my stomach balloons, lol.

Luckily I can eat pickled red beets, which also seems to settle my stomach, so that's good. And I like picles too, I just keep them at a minimum due to salt. It sucks getting older with chronic stress and hormonal issues and such lol.

Not by themselves, no! I still eat some, because I’m an adult and I have to eat them if I want to be healthy, but I can’t say I enjoy them. I tend to put up with green beans most often, especially if there’s a bit of salt and pepper on them.

By far my favourite way of eating vegetables is to have them as part of a meal where you can’t really taste them individually. Curries, stews, pasta dishes, and even burgers are all very good vehicles for veg consumption if you’re like me and dislike the taste and texture of them usually.

I’m a big meat-eater though! I don’t eat veal or foie gras (is that a meat?) for ethical reasons, but there aren’t many (if any!) other meats I dislike. Unlike my mother, I’m not someone who often opts for a roast dinner when given the opportunity, but it does bring me to another way I stomach my vegetables: smothering them in mashed potatoes and gravy!

I do confess that I don’t often eat all of my “five-a-day”, although I do enjoy fruit a lot more than vegetables—especially grapes, bananas, satsumas, and (when I can get them) strawberries—so they hopefully go some way towards redressing the balance!

this post actually inspired me to eat vegtables more. my mom served chicken nuggets for dinner and i wished i ate something healthier, especially since I'm not in the best shape. After eating the chicken nuggets, I decided to eat some lettuce from the fridge along with ranch and i actually felt a little "cleaner" after eating lettuce

These days I'll eat pretty much any vegetable as long as its prepared right :seal: , my favourite would be steamed broccoli with some rice and beef. But I definitely remember one vegetable that I would hate when I was a kid.

Mashed squash, not for the taste but for the texture that would trigger my gag reflex for some reason or another.

I've always felt kind of weird since I never had an aversion to vegetables as a kid. I've always liked them. Even broccoli. You can take broccoli away from me when I'm DEAD.
