Two of these specifically mention summer, but it's more this kind of almost folky 60s sound that I associate with both spring and summer-- there are a lot of DONOVAN songs that would be good examples as well.

splatoon soundtracks always remind me of summer, probably mainly cuz of all the time spent playing it during the summer holidays. but a lot of them also just kind of have that fun upbeat summer break vibe. squid squad/front roe songs especially. also that summer is saturated by kanzaki iori
