Hello! I've really got into creating art with AI (Nightcafe and Gencraft) and I would love to have a gallery on my site to show what the AI and I have made. I've tried coppermine, which comes bundled with cpanel. But it didn't allow me to actually upload anything. Does anyone have any recommendations for another program? Thank you so much!

Melooon offers a static website generator for image galleries.

If your server supports php, you can also use the script I've attached to this post. It is largely undocumented, but very simple to use and adapt if you know a bit HTML.

If I remember correctly, it is possible to use plain HTML and CSS for an image gallery to greater effect than one may expect. HTML5 can do a lot more than old HTML. It can even do some basic animations and reactions to events such as mouse overs, if I recall correctly. However, the resulting gallery would indeed be more limited than something that uses runtime code such as JavaScript or whatever else.

For my own site I just use plain static HTML images, but my site is intentionally spartan like that and many want more than that.

Incidentally, I initially expected that the post would be about offline image browsing programs, which are also called "gallery" programs, and in that regard I currently use FastStone Image Viewer because it is able to peer into hierarchies of folders in a more easily usable way and has more precise control over whether or not one is viewing an image in pixelated mode or not, which is important if you deal with pixel art on your site (which many retro sites use heavily) or anything like that and are managing that offline. So, that may be useful to you (and others) as well. I also used to used IrfanView, which is also good last time I used it (though that was years ago). Aseprite is also good for viewing, managing, and editing pixel art and other retro art.

melon's gallery generator is really useful if you have a lot of images!! i absolutely second that recommendation. it's so handy and really simple. it even compresses images for you so the gallery won't take up too much space (extra useful for me as someone still on a free neocities account!) i've used it for a couple different parts of my site bc it's just super convenient.
sadgrl has a plain css + html snippet for a gallery, also! i find hover effects in flexboxes can be finicky, but the fixed widths in this one i think make sure it doesn't go wild. if i recall correctly melon's gallery uses some javascript, but it could be replicated with the html popover attribute i think, if you're not a fan of using javascript!
