Weird recipes?

Okay, we have the thread with meals we like to cook a lot, now I wanna know: Do you like to experiment with food or are you a creature of habit? What's your most out there food combination/recipe? :D

I used to be super picky with food but now I love messing around with food (especially foraged ingredients that I can't find any recipes for so it forces me to mess around with them!)

Currently on my mind:

Watermelon rind kimchi
Pickled watermelon (been thinking of experimenting with honeydew?)
I tried these Swedish sour candy dates recently and I really wanna recreate them
experiments with poaching fruit and veggies in miso or tea for an interesting flavor (main ideas here are miso poached tomatoes and chai poached pears/mirabelles)
toasted sesame + different fruit combos sorbet
Overall I wanna make a lot of syrups from foraged ingredients like sweet woodruff, elderflower, quince, mirabelles, white currant, zwetschge, etc to use in my Kombucha!

I realise these aren't all that out there but I wanna see what else there is so I thought I'd ask here for more odd foods you like! :D
