i'm a huge huge fan of Chinese teas, and can never recommend them enough. to get started, you can find most varieties for pretty cheap and in okay quality just on Aliexpress, and there's plenty of websites online that offer higher grade teas. you'll need some teaware to make and enjoy them "properly", with the whole gong fu ceremony that people mentioned above, but you can also just brew it in a regular teapot and it'll still be good.
here's some of my personal favorites:
- Jin Jun Mei - a black tea with fruity and earthy overtones
- Tie Guan Yin - light oolong that has a huge range of flavors, and it will depend a lot on where and when you get it
- Jinya Dian Hong - a good one will cost you a pretty penny, but it's so worth it. very gentle and sweet, almost flowery
- Various Puerhs - woody, earthy, super rich and with lots of body
and above all
- Fenghuang Dan Cong - it's like drinking wine made of dried plums
