I like most vegetables, especially stir-fried, with water chestnut, bamboo shoots, and carrots being my favourites. The only veg I'm not big on is raw carrots, and for some reason cooked carrots if they're not cut length-wise. Anyone that hasn't tried water chestnut or bamboo shoots should have them fresh or at least frozen. Their flavour gets destroyed when canned.
Technically fruits, but I'm also big on avocado and eggplant, but I can't eat them often. A crispy, skin-side eggplant parmigiana is incredible.
1. Try boiling your vegetables briefly first and then pan-frying them. This way they are soft inside and firmer on the outside, kind of like they have them at hibachi places.

its been the only big realization though - I haven't had any salads that appealed to me, but I really want to find some :( I definitely like more savory flavors than sweet ones, so those honey vinegarette style dressings really don't do it for me >_<
Try a salad with crunchy noodles and soy sauce. You're better off finding a recipe, but what I do is make a salad with lettuce, cucumber, avocado, and whatever else I have on hand. Then I fill a small cup with crunchy noodles, add a bit of soy sauce, and swish it around so they're evenly coated in soy sauce, and empty the cup on top. But if you do it that way you have to eat it quick, otherwise the noodles will get soggy.
