I don't really go to Subway, but I do work at a Publix deli and if I want to get lunch I usually go for...
Roast beef on multigrain bread, with mayo and lots of the pepperhouse sauce. The cheese is 3-pepper colby jack if available, pepperjack if not. Toasting is optional (I usually go for it if I'm on break and can eat it immediately, otherwise it gets soggy). Toppings are very light lettuce, tomato, plenty of garlic pickles, cucumbers, and olives. Then one more drizzle of the pepperhouse on top, the deli dressing, and maybe some salt and pepper. It is... very, very greasy, but it's absolutely delicious.
A fellow Publix sub enjoyer! I also haven't really had Subway before somehow (if I have, then I don't remember it). Though I do have a preferred Publix sub order! I tend to get an Italian Publix sub on the white sub bread with added olives, mayo, oil and vinegar, and occasionally jalapeños if I want a kick. It's not super complicated but it's so good when I have a chance to get one. I'd assume there's a way to get a similar, if not identical, sub at Subway and it'd taste just as good.

I always order the same thing at Subway.
Italian bread, steak as protein, shredded cheese, toasted. Then I tell them to put as MUCH pickles as they physically can. Like just dump the entire bucket of pickles on there. Sometimes I get tomatoes if I feel like it, then yellow mustard.
Tada! The Batgal special.
I just love vinegar-y flavors so the mustard + the pickles + the savory-ness of the meat is like the perfect combo to me.
